Yesterday Joe and I made Vanilla Cup Cakes, We are using the recipe from my Hummingbird Bakery recipe book. I like this recipe as it makes nice moist cakes, I used to use the 4,4,4 method but my friend Tracey bought me this book for my birthday and I love it, I didn't trust the recipe at first as it is much more of a batter than cake mix with the milk, but it makes great, moist, tasty cakes.
You will need;
120g Plain Flower
140g Caster Sugar
1.5 teaspoons baking powder
A pinch of salt
40g unsalted butter at room temperature
120ml Whole milk
1 Egg
Quarter of a teaspoon of pure vanilla extract
Preheat the oven to 170 degrees c, or 325 degrees f.
Put the flour, sugar, baking powder,salt and butter in a bowl and with a blender or handheld whisk, beat on slow speed until you reach a sand consistency and the mixture is combined. Then gradually pour in half the milk and beat until it is just incorporated.
Then whisk the egg and vanilla extract with the remaining milk in a separate bowl,and pour in with the flour mix and beat until just incorporated. Scrape the edges then continue mixing. But do not over-mix.
Spoon the mixture into paper cases until 2 thirds full and bake in a pre heated oven for 20-25 minutes, (I found my cakes only needed 18 mins) until golden brown and the cake bounces back when touched. I usually put a knife in and check it comes out clean. Leave to cool in the tin before turning out to cool.

Once cooled we cut green circles split the cakes between us and decorated to our own chosen designs. At this stage Jack appeared to help to, I decorated 2 cakes and tried Mike from Monsters inc., and a flowery one. They tasted delicious. See 100 Happy Days ,17, for Jack and Joe's results.
