When we had the food testing night at slimming world, one of the ladies bought in Eggs and Ham, they had talked about it the previous week and I wasn't sure I would like it, however it was delicious.
So I thought I would have a go at making at home.
In a silicon muffin tray, line a muffin case with 2 slices of wafer thin ham. Then grate a little cheese into it, and crack an egg into the ham nest.
Bake in the oven on 180 degrees for about 20 mins.
When cooked, gently lift out with a desert spoon and serve with a slice of brown toast.
This was a realy quick, easy, tasty and healthy breakfast. A little like a healthy version of eggs benedict. In fact I bought some hollandaise sauce for next time I make it ,I can have a table spoon for 1.5 sins. Mmmm cant wait.
